Some good things but also a lot of approximations

With a couple of friends, we spent two nights at the inn and dined two consecutive evenings.
The restaurant area is very bright, decorated in a modern style, and adjacent to the hotel bar.
The service is relaxed in the best sense of the term and is at a good pace.
The problem when staying several days at the hotel is that there is only one menu offered in 5 courses (Approach) or 7 courses (Ascent). There is no menu available alongside this unique menu.
We therefore follow the advice of the maître d'hôtel to take the 5-course menu both evenings since there are 2 appetizers and either fish or meat in the grand menu, allowing us to mix it up from one evening to the next.
As is customary before starting the meal, we are asked if we have any allergies or intolerances, and I respond to this question that I do not eat cheese and that I would like this to be taken into account.
And what was meant to happen happened; of the four appetizers offered, two contain cheese (tomme des Bauges and goat cheese). No substitute solution is offered to me, and my dining companions happily share my portion.
Then the wine list is presented to us. The sommelier, quite friendly by the way, arrives with the menu turned towards us and opened to the page of white wines from Savoie. Promoting local wines is often an excellent idea, especially to accompany a menu where local products are highlighted. The only issue is that he is pushing us (he must have received some directives...) for two wines from the last century, the first of which is priced at €275. Having dined an average of 4 to 5 times a year for forty years at starred restaurants, this is the first time I have seen a sommelier make such a digression. I would prefer to attribute it to a clumsiness on his part rather than a forced direction of our choice.
Asparagus in the plural on the menu, but only one on the plate. A small quarter of a fillet of féra; the portions are those of a light menu according to the four diners.
When the third dish arrived, I had the unpleasant surprise of seeing my cheese plate appear. I had the audacity to make the remark, and instead, I was brought the small garnish of young shoots along with two very thin slices of radish that accompanied the Béret.
Two small desserts and the five-course menu is finished. I admit that I was left wanting in terms of the originality of the meal (I have probably become too demanding) and with my hunger for the quantities, especially when half of the amuse-bouche and the third dish were taken away from me. I do not think I am an ogre, and neither are my wife and friends.
The second dinner went less poorly for me, as no cheese was offered to me after I insisted again that I did not want any. I was given a third dessert instead of the Béret! An appetizer, a bit of pork, and three desserts.
For the wine, there was no false note this time. We had spotted a bottle that we knew was served in the food/wine pairing, and the sommelier served it to us even though it was not on his wine list.
In two evenings, we did not have the privilege of encountering the duo of chefs.
In summary, our stay was overall a disappointment, and if we add the uncleaned room, our weekend was even rather unsuccessful.
If the star is clearly claimed by management, the path leading to it is still long and filled with obstacles.
More humility and generosity would be necessary.
We came as two couples in advance to plan a stay for about twenty people next year.
Unfortunately, we will have to find another establishment because our friends would certainly hold it against us for having taken them to such a place where many half-truths hide behind a beautiful facade.
