Ahh, what a delicious delight, what a blissful moment.
I had booked it for the summer of 2020, but it was postponed due to the COVID-19 pandemic, and finally my wish came true.
The car navigation system was out of whack? My smartphone wasn't working, and I was driving anxiously in the rain, meeting deer and squirrels on the gravel road in the dense forest, so I was especially happy when I arrived. The quiet environment in the primeval forest is special.
The building looks old, but it is clean and polished, and the furnishings are calm, with cushions with floral embroidery casually placed around, creating a gentle and comfortable space.
Above all, the quality of the food is high. The flavors of the ingredients are clear, and the various ingredients are complemented by each other. The beautiful presentation and the dishes that change depending on the dish are also wonderful. I was impressed that the main dish of Mangalica pork was roasted to lock in the flavor, rather than the low-temperature roast that is popular these days. The bread is very delicious. I was able to enjoy a variety of wines by the glass, and had an unparalleled time of bliss.
The baked goods were delicious, so I asked them to send a Basque cheesecake and a quiche frozen to my house. Since the delivery office is far away, I said I could just drop them off at the store, but they packaged them carefully and sent them the same day.
I'd definitely like to visit again next year.

Gourmet dining in fairytale forest
The meal was French in style and served in the dining area. It consisted of many small courses featuring local and imported ingredients. We were served Saroma scallops and Tsubetsu beef as well as a foix gras course. The meal was prepared by an ambitious young chef who has trained in France, Switzerland and the U.S.. He previously had worked at Benu in San Francisco's Soma district. Several of the courses included dishes that had been frozen with nitrogen which created intriguing textures and flavors.
The morning meal was a traditional Japanese one, but it appeared that you could also request western food, as one Japanese gentleman was served eggs and breads.
The small staff was professional and very friendly. The woman who helped serve dinner took great pains to describe each course and explain as well as she could to us in our limited Japanese and her limited English. However, delicious food doesn't need too much explanation. It appeared that you could rent canoes and other recreational equipment. We went on a short walk and discovered a forest track starting just across the gravel road and meandering through the trees. It was well marked and had signs with the names of different trees in katakana. This place is expensive, but on par with a similar experience in a top ryokan.

… 北海道に住んでいるとはいえ､ この憧れのホテルは ちょっと遠いかな…自分には 高嶺の花かな…､そう思っていて たまに本棚を片付けては､ 捨てられない この一冊の,このページをめくっては…夢を見ていました
やっとスマホにして, 少し 使えるようになってきて､…地図を見ていた時､あ, そうだ ♪ チミケップ 検索~~(^-^*)
そして ホテルの情報や, 口コミに たどり着き…なんと…夜じゅう悩み, 明け方には… ホテルの ホームページに 予約してしまった (゜ﾛ゜;ﾉ)ﾉ
不思議な感覚だった… 神様に許されたのかな…?
でも, 迷いは全く無く そこから…そう 今も わくわくは､まだ続いています♪♪♪

死ぬまでに一度は行きたいと思っていた夢が 叶った今､ それは… またいつか行きたいな~…という 新しい夢に なってしまいそうです^^;
